Recipes


There are just so many uses for the tomato, it is delicious and can br prepared in a number of ways. I've only included a few recipes with this web page, but I'll be adding more soon. If you would like to send me some more, I'll be glad to included them on this page. Now on to the recipes:

Tomato Sauce:
Ingredients:

2 cups chopped onion
3 cloves of garlic chopped
3 tablespoons olive oil
3 1/2 cups Tomatoes, freshly diced and cored
2 small cans tomato paste
2 cups water or meat broth
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon oregano, or 1/4 teaspoon each oregano and basil

Directions:

Sauté the onion and garlic in the olive oil until they brown...make sure you stir often. Add the tomatoes, the tomato paste, water, bay leaf, salt and pepper. Simmer uncovered, stirring it occasionally for about two hours. Add more water if it is too think. Add the oregano and cook for another fifteen minutes. Remove the bay leaf. The sauce should be thick. There you have a basic tomato sauce recipe.

Sicilian Stuffed Tomatoes
Ingredients:

4 large tomatoes
1/4 cup olive oil
1 small onion
4 anchovies, chopped
1 tablespoon capers
1 tablespoon chopped parsley
1/3 cup dry bread crumbs
1 tablespoon dry white wine
1/4 teaspoon salt
Freshly ground black pepper to taste

Directions

Preheat the oven to 350 degrees F. Cut the tops from the tomatoes and scoop out the centers. Chop the centers and drain. In a large skillet heat two tablespoons of the olive oil, add the onions and brown lightly. Add the tomato pulp, anchovies, capers, parsley, two tablespoons of the bread crumbs, the wine, salt and pepper and mix.

Fill the tomatoes with the stuffing. Mix the remaining crumbs with the remaining oil and spread over the top. Bake in a greased baking dish for about 20 minutes. Makes 4 servings.

Grilled Tomatoes
Ingredients:

3 medium tomatoes
Salt and freshly ground black pepper to taste
Cayenne pepper to taste
Butter
Bread Crumbs

Directions

Cut the tomatoes in half, leaving the skin on. Sprinkle with salt, pepper and cayenne. Dot the tomatoes with a few bits of butter and sprinkle with bread crumbs. Arrange, cut side up, on the rack of a broiling pan and broil under medium heat until the crumbs are brown and the tomatoes are tender.
