Bacon Brussels Sprouts (Makes 8 servings)

1 ½ lbs. Brussels sprouts
1 lb. sliced bacon, cut into ¾" pieces
1 medium onion diced
¾ tsp. salt
½ tsp. pepper

Over medium-high heat bring pot of salted water to a boil. Add Brussels sprouts; cook 3 minutes. Drain; reserve. In large skillet over medium-high heat cook bacon until crisp, about 7-8 minutes. Remove bacon with slotted spoon; drain on paper towels. Discard all but 3 tbs. drippings from skillet. Add onion; cook until softened, about 6 minutes. Add Brussels sprouts, salt and pepper; cook until heated through, 2-3 minutes. Serve tossed with bacon.
