Deep-Fat-Fried
Oysters
Serves 2
12 large shucked oysters
Dry them well between towels. Beat together:
1 egg
2 tablespoons water
Inserting a fork in the tough muscle of the oysters, dip them
in the egg, then in: Seasoned bread crumbs
Once more in the egg and again in the crumbs. Let them dry on
a rack for 30 minutes. Fry them about 4 minutes in deep fat
heated to 375 degrees. Serve with favorite sauce.
