Tuna Melt
Serves 6
1 can 12 ounces solid white or chunk light tuna, drained and
flaked
1/3 cup mayonnaise
1 ½ tablespoons sweet pickle relish
1 ½ tablespoons chopped onion
½ tablespoon mustard
3 English muffins, split and toasted
6 tomato slices, halved
6 slices American, Cheddar, Swiss or Monterey Jack cheese
In medium bowl, combine tuna, mayonnaise, pickle relish, onion
and mustard; mix well. Spread about 1/3 cup on each muffin
half. Top with tomato slice and cheese slice. Broil 4 to 5
minutes or until cheese melts.
