Tuna Delight
Makes 4 cups
1 can (12 ½ oz.) and 1 can (6 ½ oz.) Solid White or Chunk
Light Tuna, drained and flaked
2 packages (8 oz. Each) cream cheese, softened
1 tablespoon lemon juice
¼ cup finely chopped ripe olives
½ cup finely chopped walnuts
¼ teaspoon salt
1 ½ teaspoons dry mustard
1/8 teaspoon pepper
½ teaspoon thyme
In a large bowl, combine cream cheese and tuna. Add remaining
ingredients and stir well. Place in mold and refrigerate. You
may serve in the mold or transfer to a serving plate. Decorate
with small parsley leaves, red and green peppers, and a lemon
wedge.
