Quick Fish Loaf


Serves 4

Preheat oven to 400 degrees

Drain, then flake:
1 lb. cooked or canned fish: 2 cups
Combine and beat:
1 egg
¼ cup undiluted evaporated milk or whipping cream
¾ cup soft bread crumbs
½ teaspoon salt
¼ teaspoon paprika
2 teaspoons lemon juice or 1 teaspoon Worcestershire sauce
1 tablespoon melted butter
3 tablespoons minced parsley
2 tablespoons chopped celery, onion, green pepper or olives

Add the fish. Place these ingredients in a greased baking dish. Bake about 30 minutes. This loaf may be served hot with: Tomato Sauce, cheese sauce or cold with mayonnaise.
