Oysters Huste


Serves 2 to 4

Rock salt
8 oysters on the half shell
2 tablespoons butter
¼ cup finely chopped fresh spinach
2 tablespoons finely chopped parsley
1 clove garlic, crushed
1 tablespoon lemon juice
4 tablespoons fresh breadcrumbs
Salt and freshly ground pepper

Preheat oven to 450 degrees. Fill an oval baking dish, preferably a copper one, with rock salt and arrange the oysters in their half shells on the salt. Melt butter and thoroughly blend in spinach, parsley, garlic, lemon juice, breadcrumbs, and salt and pepper to taste. Top each oyster with a spoonful of this mixture and bake in the hot oven for 3 to 5 minutes, or until the oysters curl on the edges. Serve immediately.
