New West Crab Cakes


Serves 4

1 pound crabmeat
2 egg whites
1 egg yolk
¾ pound Idaho potatoes, mashed (or 1 cup instant mashed potatoes)
1/3 cup chopped red onion or chives
1 cup bread crumbs, divided
½ cup whopped California Walnuts, divided
Pinch of salt
Combine crabmeat, egg whites, egg yolk, potatoes, onion, ¼ cup chopped walnuts, ½ cup bread crumbs and salt in medium bowl. Form into 8 flat patties. Mix together remaining ½ cup bread crumbs and ¼ cup finely chopped walnuts. Coat crab patties with bread crumb mixture. Cook over medium heat in skillet brushed with oil.
Serve with lemon wedges, fresh tomato relish or prepared salsa.
