Mackerel Loan

Serves 6

2 16-ounce cans mackerel
2 eggs
¼ cup chopped green pepper
1 cup cracker crumbs
1 teaspoon pepper
2/3 cup chopped onion
¼ cup chopped celery
½ can tomato sauce
1 cup mashed potatoes

Mix all ingredients together except ½ can tomato sauce. Shape into a loaf. Pour remaining ½ can tomato sauce over loaf. Cook for 25 minutes at 375 degrees. Spread potatoes over loaf and bake 10 more minutes until light brown.
