Lobster Newburg


Serves 4
Melt in a double boiler over not in boiling water:
4 tablespoons butter
add, stir and cook 3 minutes:
2 cups boiled diced lobster meat
Add:
¼ cup dry sherry or Madeira
Cook gently about 2 minutes more: Add
½ teaspoon paprika
1/3 teaspoon paprika
1/3 teaspoon nutmeg
Beat and add:
3 egg yolks
1 cup cream
Cook and stir these ingredients until they thicken
Season to taste
Serve the lobster at once on: Hot buttered toast
