Lobster Bisque
Makes 8 cups
Diced meat from two medium-sized boiled lobsters
2 ½ cups chicken broth
1 sliced onion
4 ribs celery with leaves
2 whole cloves
1 bay leaf
6 peppercorns
Simmer these ingredients for 30 minutes. Strain the stock.
Combine it with:
¼ cup soft butter
Gradually pour into this mixture:
3 cups heated milk
¼ teaspoon nutmeg
When the sauce is smooth and boiling, add the lobster and the
stock. Simmer the bisque, covered, 5 minutes. Turn off the
heat. Stir in:
1 cup hot but not boiling cream
Season to taste
