Fish Roll-Ups
Serves 6
1 tablespoon butter
2 tablespoons flour
¼ teaspoon paprika
1/8 teaspoon salt
1 ¼ cups milk
¾ cup shredded Cheddar cheese, divided
6 cups (10-ounce package or 1-pound bunch) fresh spinach
leaves, coarsely chopped, cooked and well drained
2 tablespoons thinly sliced green onion
6 sole, haddock or flounder fillets (about 1 ½ pounds)
Grated peel and juice of ½ lemon
3 cups hot cooked rice

For cheese sauce, in small saucepan, melt butter; remove from
heat. Stir in flour, paprika and salt; gradually stir in milk.
Cook over medium heat, stirring until thickened; remove from
heat. Stir in ½ cup cheese. In large bowl, add 1/3 cup cheese
sauce to spinach and green onion; blend well. Sprinkle both
sides of fish fillets with lemon juice. Divide spinach mixture
on fillets; roll up. Place seam side down in 9-inch baking
dish. Sprinkle roll-ups with lemon peel. Spoon remaining
cheese sauce over fish roll-ups. Bake in preheated 350 degree
oven 30 to 35 minutes or until fish flakes easily with fork.
Sprinkle with remaining ¼ cup cheese; bake until cheese melts.
Garnish with additional sliced green onion, if desired. Serve
each roll-up with ½ cup hot rice. Stir remaining sauce; serve
over fish and rice. Garnish with lemon cartwheel twists or
wedges.
