Sauce Cockaigne
About 8 Cups

A sauce for all seasons-its ingredients are always available. Great with custards, glazed bananas, cottage pudding and waffles, by itself or combined with a little liqueur or whipped cream.
Cook gently in a wide-bottom covered pan until the fruit is pulpy and disintegrates easily when stirred with a wire whisk:
2 cups dried apricots
1 ¼ cups water
Add:
1 ½ cups sugar
Stir until dissolved. Add:
5 cups canned crushed pineapple
Bring the mixture to a boil. Pour into jars and cover. Keep under refrigeration.
