Bolognese Pasta Sauce
About 2 Cups

Cook separately 6 dried mushrooms reserving them and their liquor

Melt in a large saucepan:
1/3 cup butter
Add:
¼ cup minced lean ham or Canadian bacon
¼ cup finely chopped carrot
¼ cup finely chopped onion
Stir and cook for 1 or 2 minutes. Add:
1 cup chopped lean beef
and brown over medium heat, stirring occasionally, then add the mushrooms, their liquor and:
2 tablespoons tomato paste
1 strip lemon peel
A pinch of nutmeg
1 cup beef stock
(1/2 cup dry white wine)
Partially cover and simmer slowly 1 hour. Remove from heat, take out lemon peel and stir in:
¼ cup whipping cream
