Apple Cream Pie

Yield: 6 to 8 servings

1 unbaked 9" pie shell
4 cups peeled, cored baking apples, sliced ¼" thick
1 cup sugar
3 tablespoons flour
1 cup whipping cream
1 teaspoon grated lemon peel
ground cinnamon

Preheat the oven to 400 degrees. Place the sliced apples in the pie shell. In a small bowl mix the sugar and flour. Stir in the cream until the mixture is smooth, then pour it over the apples. Sprinkle with cinnamon. Bake at 400 degrees for 10 minutes. Reduce the heat to 375 degrees and bake for 35 to 40 minutes more or until a knife blade inserted 1 inch from the center comes out clean. If the edges brown too fast, cover them for the last 15 minutes with strips of foil. Cool on a wire rack. Serve when completely cool, or place in the refrigerator until serving time.
