Almond Pear Pie
Yield: 6 to 8 servings
Pastry for a 9" pie crust
5 Bosc pears, peeled, cored and thickly sliced
6 tablespoons ground almonds
1/3 cup firm butter
1 cup sugar
1/3 cup all-purpose flour
unsweetened shipped cream, as a garnish
Preheat the oven to 400 degrees. Roll the pastry into a 12"
circle and fit it into a pie pan. Set aside.
In a medium bowl mix sliced pears with ground almonds. Heap the
fruit in the unbaked pie shell. Cut the butter into small pieces
and dot it over the fruit.
In a small bowl mix the sugar and flour and sprinkle it over the
pie. Bake in a 400 degree oven for 15 minutes. Reduce the heat to
350 degrees and bake for 1 hour more. If the edges start to brown
too soon, cover them with strips of foil. Serve with unsweetened
whipped cream.
