Oatie Flan


Yield: 8 servings

1 9" pre-baked Oatmeal Pie Shell
2 cans (15 ounces) chick peas, drained and rinsed
1 tablespoon tahini
2 to 3 cloves garlic, crushed
juice of ½ to 1 lemon
2 tablespoons olive oil
2 to 5 tablespoons water
salt and pepper to taste
2 medium tomatoes, peeled, seeded and chopped
chopped parsley, sliced tomatoes and Kalamata olives, as garnishes

Place the chick peas in a food processor bowl with the tahini, garlic, lemon juice, olive oil and 2 tablespoons of the water. Process until smooth and the consistency of fluffy mashed potatoes. If the hummos is too stiff add 2 or 3 tablespoons more water. Spoon into a medium bowl. Add salt and pepper to taste and fold in the chopped tomatoes.

Pile the hummos filling into the cooled pie shell. Garnish with parsley, sliced tomatoes and black olives. Serve at room temperature.
