Shrimp, Tomato and Cheese Flan


Yield: 6 servings

1 unbaked 9" pie crust
2 tablespoons butter
¼ cup chopped onion
¼ cup chopped green pepper
1 tablespoons chives or scallions
1 clove garlic, finely chopped
salt and freshly ground pepper, to taste
1 egg yolk
¼ cup mayonnaise
8 ounces Swiss cheese, grated
2 tomatoes, peeled, seeded, chopped
12 ounces medium shrimp cooked and shelled
3 to 4 tablespoons fresh or dry bread crumbs
paprika to taste

Preheat oven to 350 degrees.

In a small skillet over medium heat melt the butter. Add the onions, peppers, basil, chives and garlic and sauté until tender, 3 to 4 minutes. Add salt and pepper to taste and remove from heat.
In a medium bowl mix the egg yolk, mayonnaise and cheese.

Stir in the tomatoes, shrimp and cooked vegetables. Spoon the mixture evenly into the unbaked crust. Sprinkle with bread crumbs and paprika. Bake at 350 degrees for 35 to 45 minutes or until the crust rim is brown and the top of the pie has little browned flecks. Let pie sit for 15 minutes before cutting.
