Tortilla Crust


Yield: one 8" or 9" crust

¾ cup masa harina
½ cup all-purpose flour
2 teaspoons baking powder
½ cup warm water
2 tablespoons vegetable oil

Sift the masa harina, flour and baking powder into a medium bowl. Add water and oil and stir until a soft dough form. Place the dough on a well-floured surface, pat it into a circle and roll gently to about ½" thick.

Ease the crust into an 8" or 9" pie plate. Make sure it slides well into the area where the sides meet the pan bottom. For a fully baked crust, prick bottom and sides at ¼" intervals. Bake in 400 degrees oven for 15 to 20 minutes (15 minutes gives a soft, tender crust, 20 minutes a crispy one).
