Orange
Muffins
Ingredients
1 1/2 cups flour
1/2 cup sugar
2 teaspoon baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1/2 cup milk
1 teaspoon grated orange rind
1/2 cup orange juice
1/2 cup vegetable oil
1/2 cup golden raisins
Directions
Heat oven to 400°F (205°C). Grease and flour a 12-cup muffin tin.
Combine flour, sugar, baking powder and salt in a small bowl; set
aside. In another bowl, whisk egg, milk, orange rind, orange
juice and oil until smooth. Add dry ingredients mixing just until
moistened. Gently stir in raisins. Fill prepared muffin tins
two-thirds full. Bake for 18 to 20 minutes or until muffins test
done. Cool in pan on wire rack. Makes 1 dozen muffins. |
