One might be a little confused about the difference between jam, jelly, and preserves. Preserves on the other hand differ from jam in that the fruit maintains its shape, so strawberry preserves you would find a whole strawberry as an example. Jelly on the other hand can only be made out of fruits that contain enough pectin, these fruits are, plums, apples, grapes, and berries such as raspberries, blackberries, and cranberries. You can add artificial pectin to other fruits to make it in to a jelly, but it doesn't have the same taste as the jellies that can be made with natural fruits. Also jelly is made by extracting the juice from the fresh fruit and cooking it with sugar.
