Vanilla Ice Cream
Makes 2 quarts

5 egg yolks
1 ½ cups sugar
2 vanilla beans cut lengthwise and the seeds scraped out
2 cups heavy cream, mixed with
2 cups light cream

Put the egg yolks in a mixing bowl and mix at medium high speed. Slowly add the sugar and vanilla seeds. Mix until eggs have a pale yellow color and are very fluffy. Slowly add the cream, mixing it at medium-high speed. After all of the cream has been added, continue mixing for another minute. Pour into mold or any kind of container and place in freezer overnight.
