Leberklose Soup
Makes 4-6 Servings
3 slices white bread
4 tablespoons milk
1 egg
1 small onion , chopped
˝ pound calf’s or beef liver, chopped
1 teaspoon bacon fat
Salt and freshly ground pepper
Dash marjoram
4 cups chicken broth
Fresh chives, chopped
Soak the bread in milk. Put egg and onion into a blender and blend
until smooth. Add chopped liver and blend again for about 30 seconds.
If you have a “grind” button on your blender use it.
Put the liver mixture into a bowl with the soaked bread and bacon fat.
Season with salt and pepper and a dash of marjoram. If the mixture
seems too soft, add some breadcrumbs. Mix well together and form into
little balls the size of marbles. Meanwhile bring chicken broth to a
boil in pot, and add the liver balls. Reduce heat and simmer for about
15-20 minutes. Serve topped with chopped fresh chives. |
