Gazpacho
Makes 4 Servings
Note: This is a great summertime soup. Be sure to thoroughly chill the
soup to bring out its rich and spicy flavor.
5 ripe tomatoes, peeled and chopped
1 garlic clove, mashed
1 onion, chopped
1 can (101/2 oz.) beef consommé
2 tablespoons olive oil
1 ˝ tablespoons wine vinegar
2 tablespoons parsley, chopped
Side dishes:
˝ cup cucumbers, finely chopped
˝ cup tomatoes, finely chopped
˝ cup onions, finely chopped
Combine all ingredients and pour into a blender. Cover and blend until
smooth. Chill soup thoroughly and pass individual side dishes of
cucumbers, tomatoes, and onions when serving.
