Zucchini Bread - Makes 2 loaves
2 c. grated zucchini, either peeled or unpeeled
½ c. Crisco
½ c. butter
2 c. sugar
3 eggs
3 tsp. vanilla
½ tsp. salt
1 tsp. baking soda
¼ tsp. baking powder
1 tsp. cinnamon
3 c. flour
Mix all ingredients together in mixer at low speed. Pour into 2
greased loaf pans. Bake at 350 degrees for 55 minutes.
Let cool in bread pans for about 5 minutes, then remove from pans.
