Walnut Spice Cake with Vanilla Pudding
½ lb. Butter
1 c. sugar
1 c. flour
3 tsp. baking powder
½ c. farina
½ c. walnuts, chopped
6 eggs
1 tsp. cinnamon
2 (3 ½ oz.) boxes vanilla pudding
3 c. milk
Whip butter and sugar for 20 minutes. Add eggs. Add flour, farina,
cinnamon and baking powder. Turn off mixer. Fold in
walnuts. Pour into buttered 9x13-inch pan. Bake at 375 degrees for
25 to 30 minutes.
Syrup: 1 ¼ cup sugar, 3 1/8 cup water; boil 15 minutes. Cool for 15
minutes. Pour over baked cake.
Pudding: Prepare pudding according to directions on box. Spread over
baked cake. Cut into diamond shapes. Place ½
cherry on top of each diamond.
