Walnut Spice Cake (Karethopeta)
½ c. butter
1 c. sugar
8 eggs, separated
3 c. flour
¼ tsp. cream of tartar
4 c. chopped walnuts
2 tsp. cinnamon
2 tsp. baking powder
Syrup:
1 c. sugar
½ c. water
1 c. honey
½ tsp. cinnamon
1 t. rum (or lemon juice)
Cream butter and sugar well. Add yolks and beat in mixer until very
light. In a separate bowl, beat egg whites and cream
of tartar into a stiff meringue. Fold carefully into egg yolk-sugar
mixture. Combine dry ingredients and fold into mixture.
Pour into a greased 10x15-inch pan and sprinkle with a few chopped
nuts. Bake in a preheated 350 degree oven for 30
minutes, or until done. Cool cake, cut into diamond-shaped pieces
and pour syrup over top. Let stand for at least two
hours.
Syrup: Boil sugar and water for 10 minutes. Add honey, cinnamon and
rum.
