Turkey Trigona
Makes 20 pieces
My mother used to make this dish using leftover turkey from
Thanksgiving.
1 c. diced, cooked turkey
½ lb. grated Feta cheese
3 egg yolks, beaten
3 T. minced parsley
3 egg whites, lightly beaten
Combine in bowl: turkey, cheese, egg yolks and minced parsley. Fold
in egg whites. Using 10 sheets of phyllo, cut in
half, form into triangles. Bake at 350 degrees for 20 minutes.
