Taramosalata
This was a particular favorite of my Aunt Mary. Whenever, she came
for a visit, my mother would be sure to have this
famous fish roe spread as an appetizer. My mother used to tell me
this is a special caviar for kids too! It is delicious
served on raw vegetables or on crusty bread.
10 oz. jar tarama
Juice of 2 lemons
1 lg. Onion
12 slices bread (remove crusts)
1 qt. oil
Soak bread in milk. Squeeze out excess milk. Put onion, lemon juice,
tarama and bread in blender. Blend until smooth.
Add oil slowly until thick. Chill. May be necessary to blend in
small amounts. Can also be made in food processor.
Directions for using food processor when making tarama: Use plastic
blade on machine. Place tarama, lemon juice,
onion and squeezed bread in processor and blend for 5 seconds.
Keeping machine running, add olive oil in a steady
stream until mixture is thick.
