Tarama Patties
Makes 2 to 3 dozen
2 lb. potatoes
6 oz. tarama
2 scallions, chopped
2 t. chopped parsley
Flour to coat patties
Boil potatoes in skins until they can be pierced easily with fork.
Add tarama to hot potatoes. Beat until very light and
fluffy. Add scallions and parsley. Shape into small balls. Broil on
oiled pan or roll in flour and fry in hot deep vegetable
oil.
