Sugar-Coated Filled Cookies
Cookies:
1 egg
1 lb. unsalted butter
¾ c. sugar
¼ c. brandy
1 tsp. vanilla
2 ½ c. sifted flour
2 tsp. baking powder
Confectioners' sugar for coating cookies when finished
Filling:
2 eggs, beaten
¼ c. brandy
1 ½ c. finely-chopped walnuts
½ tsp. cloves
1 ½ tsp. cinnamon
4 T. sugar
Prepare cookie dough by beating together egg, butter and sugar for
15 minutes. Add brandy and vanilla. Combine
baking powder and flour and gradually add to the egg mixture. You
should have a soft dough. In a separate bowl,
combine the filling ingredients and mix well. Form a ball for each
cookie, press in the center and fill with a teaspoon of
the filling, closing the dough over the filling. Bake in a preheated
350 degree oven for 20 minutes on an ungreased
cookie sheet. Remove from oven and cover generously with powdered
sugar.
