Stuffed Potatoes
4 lg. baking potatoes
Vegetable oil
8 slices bacon, fried & crumbled
1 c. plain yogurt
½ c. milk
¼ c. green onion, chopped
3 T. Feta cheese, crumbled
1 tsp. Dijon mustard
White pepper to taste
Paprika
Wash and dry potatoes. Rub skin with vegetable oil. Bake at 400
degrees for about 1 hour or till done; cool. Cut potatoes
in half lengthwise. Carefully scoop out potato, leaving shells
whole. Mash potato pulp. Add remaining ingredients
except paprika; mix well. Stuff potato shells with this mixture.
Sprinkle with paprika. Place on baking dish and bake at 40
degrees for 20 minutes. Serve hot.
