Spinach Puff Pastries
These little pastries were always on my mother's serving tray
whenever there was a special occasion.
1 lb. fresh spinach, washed & well drained
3 eggs
½ lb. feta cheese
2 t. dried dill weed
1 med. onion, chopped fine
1 tsp. salt
½ tsp. pepper
2 t. olive oil
1 lb. phyllo
Chop spinach. Beat eggs lightly. Add crumbled Feta to eggs. Chop
onion and add to egg mixture. Fold into spinach.
Add seasonings and olive oil. Take one sheet of phyllo; fold in
half. Place 1 tablespoon of filling on edge. Fold over in
thirds. Make into triangles.
