Spanakopeta - Spinach Pie
3 lb. fresh spinach
2 bunches green scallions, finely chopped
½ c. parsley, minced
½ tsp. dry dill
1 lb. Feta cheese, crumbled
8 eggs, beaten
Salt to taste
1 lb. phyllo pastry leaves
1 c. melted butter
Wash spinach. Cut off the stems. Dry completely with towels and
chop. Mix scallions, parsley, dill, cheese, eggs and salt
and add to spinach. Line a buttered 12x18-inch pan with half the
phyllo sheets, brushing each sheet with melted butter.
Spread prepared spinach filling evenly over phyllo. Top with
remaining phyllo sheets, buttering each sheet. Bake at 350
degrees for 45 minutes.
