Spinach and Rice
Makes 6 servings

2 med onions, chopped
1 celery stalk, chopped
1 tsp. paprika
1 (10 oz.) pkg. chopped spinach
¼ c. olive oil
8 oz. can tomato sauce
1 tsp. salt
2 c. hot water
½ c. rice
Black pepper to taste

Saute onions and celery in olive oil. Add paprika, salt and tomato sauce. Cook slowly for 5 minutes. Clean spinach and
drain thoroughly. Squeeze spinach to remove excess water. Add spinach to onion mixture and pour hot water into pan;
bring to a boil. Add rice; stir well; cover tightly. Cook over medium heat for 15 minutes. Sprinkle with black pepper
before serving.
