Souzoukakia
Ground Beef Sausage
Makes 6 Servings
1 ½ lb. ground beef
3 cloves garlic, minced
½ c. bread crumbs
1 ½ tsp. ground cumin
1 tsp. salt
Pepper to taste
½ c. water
4 T. butter
2 c. tomato sauce
1 c. water
2 bay leaves
Combine meat, garlic, bread crumbs, 1 teaspoon of the cumin, salt,
pepper, and the ½ cup water. Shape walnut-size balls
into small sausages and brown in butter. Moisten hands before
shaping meatballs. Meatballs may be browned under
broiler turning for even color.
Combine tomato sauce, the 1 cup of water and the remaining ½
teaspoon c umin in saucepan and bring to a boil. Add
meatballs with pan drippings, bay leaves, and simmer until sauce
thickens, about 1 hour.
