Skorthalia
(Garlic Sauce)
6 to 8 cloves garlic, peeled
1 tsp. salt
2 c. mashed potatoes
½ c. olive oil
¼ c. vinegar
Crush garlic cloves and salt with mortar. Add mashed potatoes. Mix
well until mixture is smooth. Alternately add oil and
vinegar, stirring constantly. (Note: You may use a food processor
putting garlic, salt, mashed potatoes, vinegar into
processor. Process until smooth. Slowly add the oil and process
until sauce is thick.)
