Shrimp Piraeus
Serves 10 to 12

3 lb. jumbo shrimp, shelled & deveined
½ c. chopped onion
1/3 c. butter & olive oil mixture
2 cloves garlic
Pinch of rosemary
1 bay leaf
½ c. dry white wine
1 ½ c. fresh tomatoes, peeled, seeded & chopped
1 t. chopped parsley
½ c. grated Kafaloteri cheese

Saute onions in butter and oil for 10 minutes. Combine garlic, rosemary and bay leaf in cheesecloth pouch and drop in
onions. Simmer for 10 minutes, then discard herbs. Add wine and tomatoes to onions and simmer for 30 minutes. Set
aside until ready to serve. Add shrimp, parsley and cheese. Cover pan and cook gently for 10 minutes. Place in chafing
dish and serve warm.
