Shrimp Pilafi
Serves 4 to 6
¼ c. oil or margarine
1 med. onion, chopped
1 lb. shelled shrimp
2 T. parsley, chopped
1 stalk celery, chopped
1 c. rice
½ can tomato sauce
2 ½ c. water
Salt & pepper to taste
Saute onions in oil or margarine until golden. Add shrimp, parsley,
and rice and brown slightly. Add remaining
ingredients and simmer slowly until rice is cooked, about 20
minutes.
