Poached Salmon with Cucumber Sauce
1 qt. water
1 ½ T. salt
2 T. lemon juice
6 fresh salmon steaks
1 bay leaf
1 lemon, quartered
2 tomatoes, quartered
Cucumber Sauce:
1 unpeeled cucumber
½ c. sour cream
¼ c. mayonnaise
1 T. minced parsley
2 tsp. grated onion
2 tsp. cider vinegar
¼ tsp. salt
Pinch of black pepper
In a large skillet, heat the water, salt, lemon juice and bay leaf
to boiling. Simmer 3 of the steaks at a time for 10 minutes.
Remove with a large slotted spoon or spatula. Chill steaks well.
Cucumber Sauce:
1 unpeeled cucumber
½ c. sour cream
¼ c. mayonnaise
1 T. minced parsley
2 tsp. grated onion
2 tsp. cider vinegar
¼ tsp. salt
Pinch of black pepper
Cucumber Sauce: Grate enough cucumber to make 1 cup; do not drain.
Add the remaining ingredients and stir well.
Chill. At serving time, arrange salmon on platter. Garnish with
lemon and tomato quarters. Serve with cucumber sauce.
