Psari with Bay Leaf
Makes 6 Servings
2 lb. halibut steaks or red snapper
Flour seasoned with salt & pepper
¼ c. olive oil
¼ c. white wine vinegar
2 cloves garlic, minced
2 tsp fresh rosemary or ½ tsp. dried
1 bay leaf
Pinch or oregano
¾ c. freshly-made crumbs from Italian bread
Dip fish in seasoned flour, coating both sides lightly, and sauté in
olive oil to brown slightly. Remove to baking pan. Add
vinegar, garlic, rosemary, bay leaf. Oregano and bread crumbs to
pan. Stir, scrape up the drippings and let cook down
slightly.
Spoon over fish and bake in moderate oven (350 degrees) until fish
is baked (i.e. flaky and pure white in color),
approximately 15 to 20 minutes.
