Pork and Sauerkraut

2 (27 oz.) cans or bag of sauerkraut
2 T. butter
4 lb. pork roast (with bone or boneless)
Salt & pepper to taste
1 tsp. paprika
8 oz. can tomato sauce
¾ c. water

Arrange sauerkraut in large baking pan. Place a few squares of butter over the sauerkraut. Season with salt, pepper, and
paprika. Mix the tomato sauce with ¾ cup water. Pour over sauerkraut and mix well.

Season meat with salt and pepper. Place it on to of sauerkraut. Bake in 350 degree oven until meat is done. Turn meat to
brown on all sides. Stir sauerkraut occasionally until the liquid is absorbed and the sauerkraut is a dark golden brown.
Sauerkraut should be moist, not dry.
