Pineapple Cake
1 c. flour
½ c. sugar
1 egg (or 1 egg white & 1 tsp. vegetable oil), slightly beaten
20 oz. can crushed pineapple, drained
1 tsp. baking soda
½ c. coarsely-chopped walnuts
1/3 c. raisins
¼ c. brown sugar, to sprinkle on top before baking
Mix all ingredients together in bowl and spread in a greased
8x8-inch pan. Bake at 350 degrees for 30 to 35 minutes.
