Pecan Cookies
2 c. butter, softened
8 T. powdered sugar
4 c. chopped pecans
4 c. flour
2 T. vanilla
2 T. ice water
3 ½ c. sifted powdered sugar
Cream butter with 8 tablespoons of powdered sugar until very light
and creamy. Mix together flour with pecans and
gradually add to butter mixture. Add vanilla and ice water, mixing
well. Roll pieces of dough with the palms of your
hands into 1-inch rolls or crescents. Place on cookie sheets and
bake in a preheated 325 degree oven for 25 to 35
minutes. Sift powdered sugar generously over the cookies and place
in a covered tin to mellow for a few days.
