Paximadia I
Makes 5 or 6 loaves
This is a Greek zwieback cookie.
6 eggs
2 c. sugar
2 c. vegetable oil
½ tsp. salt
2 ½ lb. flour (approximately)
1 T. vanilla
2 c. chopped, toasted almonds, or walnuts
2 tsp. baking powder
1 tsp. baking soda
2 oz. brandy
Beaten egg yolk for topping
Beat together eggs, sugar, vegetable oil and salt. Add vanilla,
brandy and dry ingredients. Divide dough into 5 equal
parts. Pat each into narrow loaves about 1 inch high. Brush with
beaten egg yolk. Bake at 350 degrees for 20 minutes.
While still warm, slice diagonally, lay down on sides and bake a few
more minutes, until golden brown.
