Okra with Tomatoes
Serves 4 to 6
2 lg. onions, thinly sliced
2 T. butter or margarine
4 T. oil
1 lb. can tomatoes, crushed
6 oz. can tomato paste
1 c. water
1 tsp. garlic powder
½ tsp. dill
Salt & pepper to taste
2 pkg. frozen okra
Combine melted butter or margarine with oil. Saute the onions until
soft. Add remaining ingredients except for okra.
Bring to a boil. Reduce heat and simmer for 15 minutes. Separate
frozen okra and place in a 9-inch square baking dish.
Pour tomato mixture over okra. Cover with aluminum foil and bake at
350 degrees for 1 hour. Uncover and bake for
anoter ½ hour. Do not stir.
