Nut Cake (Karidopita)
6 eggs
1 c. sugar
1 c. sifted flour
1 lb. Walnuts (ground or finely chopped)
½ tsp. salt
½ tsp cinnamon
½ tsp. cloves
2 tsp. (heaping) baking powder
Syrup:
2 c. sugar
5 ½ c. water
2 c. honey or light corn syrup
Sift together flour, baking powder, salt and spices. Beat egg whites
until stiff. Add sugar gradually and continue beating.
Add egg yolks. Fold in sifted dry ingredients and mix well. Bake at
350 degrees about 35 minutes in a 9x13-inch greased
pan.
Syrup: Boil sugar and water for 10 minutes. Remove from heat. Add
honey or corn syrup. Let cool. Pour cooled syrup
over hot cake.
