Naxiotico Cake

1 c. Mazola oil
3 eggs
3 tsp. baking powder
1 c. milk
2 c. sugar
2 ½ c. flour
rind of 1 lemon

Mix oil and sugar in mixer and then add whole eggs, one at a time. Slowly add the milk. Premix flour and baking powder
and add a little at a time to the above mixture. Pre-grate the lemon rind into fine texture and add this to mixture slowly.
Place batter in bundt pan which has been greased and floured. Bake in 350 degree oven for approximately 1 hour. After
cake is cool, sift confectioners' sugar over top.
