Miniature Souvlakia
Serves 6 to 8
2 ½ lb. boneless lamb, cut into 1" cubes
Sliced onions
Quartered green peppers
Sm. mushrooms
Cherry tomatoes
Marinade For Meat:
¾ c. vegetable oil
½ c. lemon juice
¼ c. fresh parsley
1 tsp. salt
1 tsp. dried oregano
1 tsp. dried thyme
½ tsp. freshly ground pepper
refrigerate meat in marinade overnight. Turn meat frequently.
Alternate meat and vegetables on skewers. Broil over hot
coals, turning frequently. These may also be broiled in the oven.
