Meatless Pastitso
1 lb. macaroni
½ lb. butter
1 c. Romano cheese, grated
1 c. Mezithra cheese, grated
1 c. Feta cheese, crumbled
6 eggs, beaten
2 c. milk
Ground white pepper
8 sheets phyllo
Cook macaroni in boiling salted water until tender; drain well. Mix
¼ pound of the melted butter with the macaroni in a
large bowl. Add the Romano cheese, Mezithra cheese and the Feta
cheese. Beat the eggs, milk and pepper together and
pour over macaroni mixture. Butter a 9x13-inch pan. Arrange mixture
in pan. (This can be prepared one day ahead to this
point, covered and refrigerated.) Cover mixture with phyllo,
brushing each sheet with melted butter. Score phyllo with tip
of sharp knife into squares. Bake in 350 degree oven for 15 minutes.
Reduce oven to 300 degrees and bake another 35
minutes. Let stand 15 minutes. Cut into squares.
